One of the great things we do as a group is to share good times over good food. Usually these are pot-luck dinners. Here are some of the recipes of foods we've enjoyed together:
Bob's Cucumber Salad (How a Chemist Creates a Salad)
Blend of Cucumbers to Onions // 3 to 1 ratio // pick bowl size - fill to 2/3 level
Sprinkle Salt @ 1 tsp - mix with sliced Cucumbers - let sit for 30 min - decant water
Add Onions as rings
Add Sour Cream and mix until everything looks white
Add 1 tbs of Vinegar and mix
Add Dill until you see the specks floating on the sour cream (50 specks per square inch)
Salt and Pepper to taste
If you're counting calories skip the sour cream
Jeanne's Pasta Salad
(Serves 10-12)
2 cups uncooked pasta
1 small bag frozen mixed vegetables (I use the California mix--broccoli, carrots, and cauliflower)
1-2 cups cherry tomatoes
1-2 cups mozzarella cheese, cup in 1/2 inch cubes
1 can black olives, pitted and drained, if desired
1 small bottle Italian dressing
Cook the pasta to the al dente stage and drain
Add uncooked frozen vegetables, tomatoes, cheese, olives, and dressing and mix well.
Refrigerate for several hours or overnight, stirring occasionally to make sure all ingredients are well marinated
You can also add thinly sliced zucchini squash (uncooked) for variety, as well as cubed tofu (firm) for added nutrition.
Jerrys' Baked Beans:
Ingredients:
1 or 2 cans of Bushes Baked beans.
1 onion , medium size
Open can(s) with can opener
Pour or dump beans (without spilling them) into a baking dish.
Chop the onion and stir into beans. (amount to taste)
Bake in oven for 30 minutes at 300 degrees.
Optional: can add 1 tsp of baking soda to reduce flatus. (Sometimes this works, sometimes not.)
